Finca La Santa Maria:

An organic coffee with heart. Rooted in community, hard work and faith, Finca Santa Maria is run by 22 women heads of households committed to growing exquisite, high quality coffee in harmony with nature. Certified with the “Con Manos de Mujer” seal, proudly honoring the work of these women, it also carries the Smithsonian Bird Friendly certification, which requires at least 12 meters of canopy height and at least 40% mixed-foliage cover over the coffee, with tree diversity. Supporting a forest-like habitat for birds and other wildlife, while also fighting climate change and keeping your cup free of pesticides.


Varietal:

The name “Tabi” means “good” in the native tongue of Colombia’s Guambiano people, and it’s been on farms since 2002. Created by Cenicafé to boost cup quality while bringing built-in leaf rust resistance, it’s bred from Typica, Bourbon, and the Timor Hybrid. It keeps the classic quality profile of Bourbon and Typica, with the anti-fungal resilience from its Timor roots. In the cup, Tabi is known for its rich, complex, and balanced flavor—often showing notes of chocolate/caramel, dark fruit, and sometimes gentle nutty sweetness.


Processing:

Cherries are hand-picked to ensure only the ripest fruit gets cleaned and sorted for fermentation. They first ferment whole in their shell for 22 hours, delivering a clean, bright cup with lifted fruit notes. Then they’re de-pulped and fermented again—anaerobically this time—for 50 hours under controlled temperature. This develops deeper sweetness and complexity, with tamarind-like tang and a molasses-caramel texture. Finally, the beans are pre-dried for 15 hours before being mechanically dried to 11% moisture.
